MouCo Cheese Company

MouCo started crafting soft-ripened cheese in July of 2001. Owner, Birgit Halbreiter grew up in Germany and trained and worked for one of the largest soft-ripened cheese manufacturers there. Birgit moved to Fort Collins, CO where she met Robert Poland and started the MouCo Cheese company.

Polidori is the oldest sausage manufacturer in Colorado that is still family owned. Steve and Melodie are 4th generation Polidori's who have continued on with their Great Grandmother's recipes.
